Our History
The Consortium Cooperatives Fishermen of
the Polesine was born in 1976; 
actually
it is formed by 12 cooperatives that collect 1450 associates. The
increase of the production of the mollusc
in rich waters of the Delta has
placed the Consortium of Scardovari which one of the greater Italian and
European truths in the breeding and commercialization of the mussel and above all of the
true clams. Currently
with the numerous fixed traditional systems in lagoon and the systems off-shore
in sea has a production anniversary of approximately 4000 tons of mussel,
while in the 6500 hectares of concession lagoons the 9000 tons of clams can be exceeded
true. 
The
management of the resource has been always scrupulously programmed and put into
effect to the aim to catch up a good production and above all the maximum
respect of the atmosphere without to disturb or to crack the delicate natural
equilibrium that is to the base of the rearing mollusc and future present
activity.
Therefore the peach comes still today carried out exclusively by hand without
the aid of some put mechanic, is a minimal ransom of collection, the 
every
day maximum share for fisherman, the spin of the zones of peach and the zones of
biological rest and finally practices one massiccia and expensive action of
seeds of mollusc indispensable
for the maintenance of the stocks of mollusc.
Just the carried out peach by hand renders the particularly vital product and
resident 
to the successive
operations of purification, selection,
manufacturing and shipment.
Although particularly laborious and heavy for the fishermen, the manual peach
remains a prerogatives and
peculiarity of the product of Scardovari to absolute guarantee of the freshness and the
vitality of the mollusc,
ready for being able to be tasted their daintiness, genuineness and taste.
